SEA SALT BUTTERSCOTCH PRETZEL COOKIES

Ingredients

  • 1 cup butter
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon coarse sea salt
  • 1 1/2 cups light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 3/4 cup butterscotch chips
  • 3/4 cup semi-sweet chocolate chips
  • 1 cup coarsely chopped pretzels
  • optional � flaked sea salt

Instructions

  1. In a medium saucepan, melt the butter over medium heat, then bring it to a boil. Once the butter starts boiling, swirl the pan constantly until the butter passes the foamy phase and becomes a deep amber color. Remove the pan from the heat and allow the butter to cool for 20 minutes.
  2. While the butter is cooling, preheat the oven to 350�F. Line a baking sheet with parchment paper and set aside.
  3. In a large bowl whisk together the flour, baking soda, and sea salt. Set aside.
  4. Add the brown sugar, eggs and vanilla into the cooled butter in the saucepan and stir to combine. Pour this mixture into the bowl with the flour mixture. Stir using a a rubber spatula or wooden spoon until the dough comes together.
  5. Stir in the butterscotch chips, chocolate chips and pretzels.
  6. Using a medium (2-tablespoon) cookie scoop, drop the dough 2 inches apart on the baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool for 2-3 minutes on the baking sheet and then transfer to a wire rack to cool completely.
  8. If desired sprinkle with a tiny pinch of flaked sea salt on top of the cookies while cooling.

(If you do not have an ice scoop, then measure out the dough into scoops of about 2 tablespoons.) Flatten slightly, pressing your thumb in the center of the ball to create a small bowl shape. Repeat with the remaining dough. Spoon the cream cheese into the indents in the cookies.
  5. Bake until the filling is barely set and the cookies are lightly golden, 12 minutes. Allow to cool 5 minutes on the baking sheets before removing them and cooling completely on a wire rack.

  •  1 cup butter, softened
  •  1 and 1/2 cups sugar
  •  2 large eggs plus 1 egg yolk

Instructions

  1. Preheat the oven to 350 degrees F. Line one or more baking sheets with parchment paper or a silpat.
  2. In a large bowl or stand mixer, beat the butter and sugar together. Scrape the sides and bottom of the bowl, then beat on medium for about 2 minutes, or until light and fluffy.
  3. Add the eggs + yolk, peppermint extract, and food coloring.
  4. In a separate bowl, combine flour, baking powder, baking soda, cream of tartar, and salt. Add to the wet ingredients and combine until the flour is not quite incorporated.
  5. Add half of the chocolate chips to the dough.* Chop the other half coarsely, with a knife or in a food processor.
  6. Add the chopped chocolate to the dough, and mix until just combined.
  7. Cover the dough and refrigerate for about an hour.**
  8. Use a 1/4 cup measuring cup to form balls of dough and shape them into a long oval shape (not a ball shape, think more egg shape). Place them on the cookie sheet (the tall way) lined with parchment paper or a silicone mat. These are very large cookies, I only did 8 cookies per pan.
  9. Bake at 350 for about 8-10 minutes, or until BARELY starting to brown on the edges. The centers should mostly be not-shiny when you take them out, but a little shine is okay.
  10. Let cool 5 minutes on the pan, then remove to a cooling rack.

Recipe Notes
*I reserved about 1/3 cup of the whole chips and pushed them into the baked cookies immediately after taking them out of the oven.

**Chilling is not mandatory. You can bake them right after you mix it, I tried it. They will still turn out fine. I prefer the texture and flavor after a little chilling though.

  • 1/2 cup chocolate chips melted with 1 tsp. shortening, veg. oil or coconut oil (per 4 Oreo Cookie Dough Sandwiches, or 8 if just dipping half in chocolate.)

INSTRUCTIONS
TO MAKE THE COOKIE DOUGH:

  1. In a large bowl, beat butter and sugars with an electric mixer on medium speed until light and fluffy about 3 minutes. Mix in milk and vanilla. Stir in flour and salt and mix on low speed until incorporated. Stir in chocolate chips.
  2. Gently twist open desired amount of Oreos and scoop 1 tablespoon of dough on one side of the Oreo then top with the other side of the Oreo to make a sandwich. Repeat until finished. (You could also roll the dough into balls then place inside the Oreos for a cleaner look but I prefer the messy look.)
  3. Enjoy! Or

IF DIPPING IN CHOCOLATE:

  1. Place Cookie Dough Stuffed Oreos on a wax paper lined baking sheet and place in the freezer for at least 15 minutes or up to an hour.
  2. For every four Cookie Dough Stuffed Oreos use 1/2 cup chocolate chips + 1 tsp. oil. Melt in the microwave 30 seconds at a time until smooth, stirring in between each 30 seconds. Dip it in melted chocolate using a fork or a dipping tool. Remove from chocolate and holding it above the chocolate let excess chocolate drip down. Place on wax paper. Add any toppings like sprinkles if desired. Continue until all Cookie Dough Stuffed Oreos are covered in chocolate. Place back in freezer for about 10-15 minutes for chocolate to set.
  3. Refrigerate in an airtight container for up to 3 days.

  3. Preheat oven to 350 degrees.
  4. Butter hands and roll dough into 1 inch balls. Place on cookie sheet covered with parchment paper.
  5. Bake for 10 minutes. Allow to cool for 5 minutes only. Press one peppermint kiss into the top of each cookie. Move to cookie cooling racks being very careful not to the touch the kiss.
