Chili Lime Baked Shrimp Cups Recipe #dinner #appetizers

YOU WILL NEED
BAKED WONTON CUPS

  • 15 wonton wrappers 
  • 1 1/2 tablespoons olive oil
  • Salt

FOR THE SHRIMP

  • 2 teaspoons olive oil
  • 12 large shrimp, peeled and deveined
  • 1 lime
  • 1 teaspoon ancho chili powder, try our homemade chili powder recipe or substitute regular chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup baby arugula leaves

LIME SOUR CREAM

  • 3 tablespoons sour cream
  • 1 teaspoon fresh lime juice
  • Pinch salt

DIRECTIONS
PREPARE WONTON SHELLS

  1. Heat oven to 350 degrees F.
  2. Lightly brush wonton wrappers on both sides with olive oil. Lightly season one side with salt.
  3. Using a mini muffin pan, press the wonton wrappers down into the cups, laying back the corners and pressing the bottoms down to make a defined cup. Bake until lightly browned, 8 to 10 minutes. Transfer to a rack and let cool.

COOK SHRIMP

  1. Using a microplane, zest the lime. Set the lime aside for serving. Add the lime zest to the shrimp along with the olive oil, chili powder, salt, and pepper. 
  2. Toss then arrange on a baking sheet in one layer. Bake until the shrimp are opaque throughout, 8 to 12 minutes.

MAKE LIME SOUR CREAM

  1. In a small bowl, stir the sour cream, lime juice and salt together.

TO FINISH

  1. Fill the cooled wonton cups with a few leaves of arugula, a small dollop of lime sour cream, and a chili-lime shrimp. 
  2. Serve with lime wedges for spritzing on top.

INGREDIENTS

  • 8 oz cream cheese
  • season salt
  • 1 package soft tortillas
  • 1 large package of thinly sliced deli ham
  • 1 large jar of baby dill pickles

INSTRUCTIONS

  1. Spread one tortilla with softened cream cheese and sprinkle with season salt.
  2. Top with a layer of thinly sliced deli ham.
  3. Place pickles across one end of the tortilla.
  4. Wrap the tortilla around the row of pickles and continue to roll to the other end of the tortilla.
  5. Slice the roll into 1/2 inch slices.
  6. Place on a serving tray and repeat until you run out of ingredients.

Ingredients

  • 8 ounces cream cheese , softened
  • 1/4 cup blue cheese , optional
  • � cup ranch dressing
  • 1/4-1/2 cups Frank's Hot Sauces
  • 1 cup cooked chicken , shredded
  • 2 cups shredded cheddar cheese (mozzarella cheese, or a mix), divided
  • 1 loaf French bread

Instructions

  1. In a mixing bowl combine cream cheese, blue cheese (if using), ranch dressing, and hot sauce until smooth. 
  2. Stir in chicken and 1 1/2 cups of shredded cheese.
  3. Cut the top edge of the bread loaf off and hollow out it out a little to fit the filling. I like to leave an inch or so of crust and bread around all sides.  
  4. Spoon the buffalo chicken mixture into the loaf. Sprinkle with the remaining 1/2 cup shredded cheese. 
  5. Place on a baking tray and bake at 350 F degrees for about 18 - 22 minutes or until warmed through.

These Cheesy Meatball Bites are one of my preferred meatball tidbits ever. They're just 4 fixings and very quick to make and have rapidly turned out to be one of my most prominent canap� plans.

CHEESY MEATBALL BITES #gameday #appetizers

Ingredients

  • 1 8- oz can Pillsbury Crescent rolls
  • 1 cup shredded mozzarella cheese
  • about 1/2 cup marinara sauce
  • 12 meatballs I used pre-made, frozen ones

Instructions

  1. Preheat oven to 375 degrees F. Spray a regular sized muffin pan with non-stick spray.
  2. Unroll crescent dough. Separate into 2 large sections along the perforated edge. Cut each of the 2 large sections into thirds, then divide those sections down the middle, so that you have 12 squares total. (See video- it's much easier shown!) You can also use the round crescents and not worry about cutting the dough or anything- just use one roll per muffin cup. 
  3. Press each square into one of the muffin cups, doing your best to press down into the cup and somewhat up the edges.
  4. Spoon about 2 teaspoons of marinara sauce into the bottom of each crescent dough cup. Follow with a spoonful of mozzarella cheese. Place 1 meatball (they can be frozen still, no need to pre-thaw!) into the center of each cup. Spoon another 2 teaspoons of marinara sauce on top of the meatball, then finish with more mozzarella cheese.
  5. Bake for 15-17 minutes, until crescent dough is golden brown and cheese is bubbling. Remove from oven. Let cool a few minutes, then remove each meatball bite from the muffin pan. Serve with additional marinara sauce, if desired.

  • Tater Tots (about 48 pieces)
  • � cup cheddar cheese, grated
  • � cup real bacon bits
  • 1-2 green onions, chopped

Instructions

  1. Bake the tater tots according to the package directions. I baked mine at 425F for 28 minutes, flipping them once half way through.
  2. Remove from the oven and let them cool for a few minutes.
  3. When they're cool enough to pick up with your fingers, add 4 to 6 tater tots to each skewer.
  4. Place the skewers on a parchment lined baking sheet. Sprinkle the cheese on top of the tater tots, then the bacon bits, and finally half of the chopped green onion.
  5. Return them to the oven and bake for another 5 to 7 minutes until the cheese is melted.
  6. Remove from the oven and sprinkle them with the remaining green onions.
  7. Serve with sour cream.
